Zucchini Bread

3 eggs
1 cup corn oil
2 cups sugar or splenda
2 cups peeled and grated zucchini
3 cups flour
1 tsp salt
1 tsp baking soda
¼ tsp baking powder
2 tsp vanilla
3 tsp cinnamon
½ cup nuts or raisins
Beat together eggs, add oil, sugar, zucchini and vanilla.
Add flour, salt, soda, baking powder, and cinnamon.
Stir in nuts or raisins by hand. Put in 2 greased and floured bread pans.
Bake at 325 degrees for 1 hour.
